Last year I was so lucky to be invited to a KOO media event, where we were introduced to all the new KOO options available on the shelf. I now never walk past the vegetable can section in a supermarket. My favourite is the KOO Black Beans in Mexican Style Sauce. It is such a versatile can to have in the cupboard. Great as is, or in bowls and wraps. As a vegetarian, it is great to bring along when friends or family forget about your food preferences.

I have made the KOO Mixed Bean and Salsa Salad a couple of times. When I could not find the KOO Black Beans with Mexican Style Sauce, I used normal KOO Blacks beans with a coconut sauce mixed with Mexican spices. Not as nice as the original, but it also works!
This is a great summer salad, as is, or added to wraps and bowls.
KOO MIXED BEAN AND SALSA SALADServes 4 -6
Ingredients:• 1 can (410g) KOO BAKED BEANS IN TOMATO SAUCE (or your favourite flavour of KOO BAKED BEANS)
• 1 can (410g) KOO BLACK BEANS IN MEXICAN STYLE SAUCE
• 1 can (410g) KOO WHOLE KERNEL CORN IN BRINE, drained
• 2 tomatoes, diced
• 1 green pepper, finely diced
• 1 red onion, finely chopped
• ½ cucumber, diced
• Fresh coriander, finely chopped
• 1 avocado, peeled and diced
• Salt and freshly ground pepper to taste
• 45ml (3 tablespoons) olive oil
Method:1. Toss together KOO BAKED BEANS, BLACK BEANS, WHOLE KERNEL CORN, tomatoes, red pepper, red onion, cucumber, and coriander. Add the avocado last, so as not to make it too mushy.
2. Season to taste with salt and freshly ground black pepper, drizzle with olive and toss lightly. Refrigerate before serving.
Made the KOO mixed been and salsa salad again, but couldn’t find the Black beans in Mexican Style sauce, so substituted with KOO Red Kidney beans and made my own sauce.
